Little Grandma's lemon Bars

Crust:

  • 2 cups Flour
  • 1/2 cup Confectioners Sugar
  • 1 cup Butter

Mix like pie crust,press into 9 x 13 pan bring dough up about 1 inch on side of pan Bake at 350⚪ for 20 min. or until lightly brown

Filling:

  • 4 Eggs
  • 2 cups Sugar
  • 1/2 cup Lemon juice
  • 1/4 cup Flour
  • 1/2 tsp Baking Powder

Beat first three ingredients together until creamy. Blend together flour and baking powder and add to egg mixture then pour over crust as soon as it comes out of oven. Bake at 350⚬ for 20 to 25 minutes. Let cool then dust with confectioners sugar and cut into squares. Filling will be a little on the loose side, but it sets quickly.
